Help with selecting sensors

I am new to Arduino but am a quick study and can get up to speed fast. I can see some tremendous benefit to the field in which I work improving the accuracy and consistency of adjustments and measurements I have to work with. Perhaps a few geeks and engineers can help me navigate the world of sensors. First I need to find sensors that duplicate what an analog physical gram gauge does.
